7 spices roasting and Maqluba eating
Mrs. Hana welcomes guests into her home to share her knowledge about the famous “7 Spice Mix” that Jordanians use in many local dishes such as Kabsa or, the second most famous dish in Jordan after Mansaf. Guests will learn about the 7 spices that are used, how to roast and grind them in preparation for use in Maqlouba. While learning how to make this dish, your host will share the story of this tasty dish that dates back to 1187 A.D when Salah Al Deen freed Palestine from the Crusaders. The Palestinians offered Salah al Deen a special rice-based dish with fried eggplants and chicken cooked in a pot that they inverted or turned upside down when ready to eat. Hence the dish was named Maqlouba which means ‘upside down” in Arabic.
